Restaurant inspections from Dec. 29 to Jan 4: The Mission, Moe’s Southwest Grill, 3 others cited - syracuse.com

Here are the restaurant inspections by the Onondaga County Health Department from Dec. 29 to Jan. 4.

Unsatisfactory inspections

The Brick House Cafe

5885 E. Circle Drive, Cicero

Inspected on Jan. 2

Poly cutting board on prep top sandwich station noted with heavy staining and cut marks. Clear lids on white bulk food bins noted in poor repair/broken/ill fitting. Final rinse on dish machine noted at 120 degrees and not at 180 degrees minimum as required. Booster heater was off - employee turned on and after 10 minutes final rinse temperature still at 120 degrees. Recheck required. Product hold plate on meat slicer noted not clean with food residue. Panini grill noted with excessive carbon build up. All low shelving on both sides of cookline and shelving holding stainless steel pans not clean. Interior of Auto Sham on cookline not clean with spilled food. Some floor areas not clean-primarily corners and some baseboard areas. Products checked for reference are as follows; deli turkey in walk in cooler 43.5 degrees, deli ham in walk in cooler 45.0 degrees. tuna fish salad in prep top 44.5 degrees. Hot held vegetable soup 175 degrees, cooked chicken breast in prep top cooler 43.4 degrees.

Single service items used as scoops in bulk products lacking handles. Case of single service item stored on basement floor. Accessible thermometer lacking in kitchen prep cooler. External dial of thermometer on walk in cooler inoperable. White poly cutting bords noted in poor repair with heavy staining and cut marks. Interior of plastic tubs holding clean sanitized utensils not cleaned, with food debris. Ice slide inside ice machine noted with mildew. Exterior of most spice and food additive containers, two tier tan cart, control panels of cookline equipment, wire rack holding clean pots and pans, bottom of one chest cooler at bar, inside of all cooling equipment in back storage area, and basement walk-in cooler shelving-all not clean with accumulated food soil. Mouse droppings noted in establishment. Most floor areas in kitchen and rear storage area not clean-primarily under racks, equipment, and along baseboards. Basement floor noted with standing water.

Moe's Southwest Grill

7560 Oswego Road, Liverpool

Inspected on Jan. 3

Prepped food items stored in small metal pans, double stacked without hard covers in between. Front hand wash sink closest to the main prep/service line is not working. No hot water, cold water just a trickle. Three bay sink in the kitchen noted leaking onto floor below, in an area that has been duct taped around the pipe. Men's room toilet has leak around base of toilet, it seems, and water trails over the floor to the floor drain.

Pack of raw beef stored directly above cooked foods (Corrected, beef moved). Scoops stored directly in product in flour and sugar and rice bins (corrected during inspection). Thermometer missing from small refrigerator near front counter. Evidence of tobacco use in rear food prep room and bathroom. Cigarettes and ash can present and tobacco odor present. Cardboard used to cover food prep areas adjacent to grill. Wiping clothes not stored in a sanitizing solution (corrected during inspection). Interior of microwave noted not clean. Interior and exterior of reach in and walk-in coolers noted not clean. Shelving throughout kitchen not clean. Paper towels missing from handwash sink. Corrected during inspection. Floors in kitchen and walk-in cooler not clean. Ceiling tiles in kitchen noted with dust accumulation. Ventilation hoods noted with an accumulation of grease. Won ton soup measured at 190 degrees in steam bath. Bourbon chicken measured at 45 degrees in reach in cooler.

Large 15L and 17L containers of Vodka Sauce approximately 10-12 inches deep noted at 49.4-51.2 degrees after approximately 24 hours in walk-in cooler (corrected - product voluntarily discarded). Precooked and previously cooled homemade chicken and rice soup noted in hot holding unit at 122 degrees for less than two hours and not reheated to 165 degrees minimum before adding to hot holding unit (corrected - product reheated to 165 degrees minimum on stove and returned to hot holding unit to be maintained at 140 degrees minimum). Containers used for scooping bulk Semolina lack handles. Panini grill noted with carbon build up. Left low cooler door gaskets on cookline not clean. Some floor drain wells under cookline noted with accumulated food debris/soil. Floor areas in kitchen under cookline and along baseboards and corners not clean. Product temperatures for reference are as follows; sliced tomatoes 41.6 degrees, raw beef burgers 38.5 degrees, cold precooked Buffalo chicken 41.5 degrees., Pizza sausage 43 degrees. Education give for proper cooling techniques and left brochure on same.
